From the skilled hands of our grandparents: a flavor that has been handed down over time, the Queen of cured meats in southern Italy. The choice of meats is done with painstaking attention, selecting only the ham, eliminating all the nervous parts from it. The lard strictly cut with a knife point and pepper, ground and in grains, are added to the particularly lean mixture. When stuffed, it can be either flattened or round.
